Watermelon Mimosa
It’s summertime, and we’re all in quarantine. Time for a cocktail! Whether you’re making brunch or eating takeout, this Watermelon Mimosa is the perfect sweet, summer drink to pair with any meal of the day. There are no rules anymore!
I went to pick up my curbside grocery order the other day. Out of the building came two carts: one filled with grocery bags and a second with only a gigantic watermelon inside. When they put the watermelon in the trunk, the car bounced! This thing was bigger than I imagined when I ordered it. What was I going to do with all this watermelon? How was it going to fit in the fridge?
I had to wait a week before there was enough room in the fridge to store the prepared watermelon. It took me about 45 minutes to cut half of it into snack-size chunks and juice the rest. The chunks filled my biggest bowl and another big container, and it basically filled the whole top shelf of the fridge! Then, I cut the rest into chunks and put it in the blender. I blended the watermelon for a minute and poured it into a mesh sieve over the top of a pitcher to strain out the pulp. The juice can still have some settling, but just stir it up and it’s good as new. We make all sorts of watermelon cocktails during the summer with this watermelon juice, but this watermelon mimosa is one of our favorites.
Watermelon Mimosa
Ingredients:
4 oz Sparkling Wine (I used Tissot Marie Sparkling Rose Cremant, but use your favorite)
1 oz Fresh watermelon juice
Squeeze of fresh lime juice
Salt (optional)
Instructions:
Fill your glass with sparkling wine.
Add a splash of watermelon juice, lime and salt to emphasize sweetness.
Gently stir and enjoy!
