Saladini Pilastri Pecorino is from Offida, Italy D.O.C.G. It is a still white wine made from organic grapes that are harvested mid-September. This wine is pale yellow and tastes like juicy lemon, salty ocean air and white rock minerality. It has medium acidity and medium body. It would indeed pair nicely with Pecorino cheese!
