Penney Poppers

Luckily, I married into a family with some great simple and delicious recipes. Penney Poppers are one of my favorite family recipes that have made an appearance at every grill day and burger night for years, but they never last long on the table. These bacon wrapped jalapeños have great texture and are full of flavor in every component, but are so easy to make with only 4 ingredients!

Hot tip: Wear non-latex gloves throughout the process to save your fingers (and anything you touch for the rest of the day) from getting spicy.

Penney Poppers

Yield: 30 Poppers

30 Minutes

Ingredients

15 Fresh Jalapeños

30 Pieces of Bacon

2 Bricks of Cream Cheese, softened

1 Package Hidden Valley Ranch Seasoning Mix

Process

Preheat oven to 400º and line two baking sheets with aluminum foil.

Separate pieces of bacon and lay across baking sheets. Par bake bacon for 10-15 minutes. Let cool 5 minutes.

Slice off the top of the jalapeños and cut in half following the curve of the pepper. Discard the seeds, stems and membrane.

In a medium bowl, mix softened cream cheese with ranch seasoning packet. (I use my gloved hands because I find it easier than using a spatula.)

Fill each half jalapeño with the cream cheese mixture and wrap with bacon.

Bake again 10 minutes or until the jalapeños are slightly softened, the filling is warmed through and the bacon is crispy.

Serve your crowd!
